Here's mine (you didn't ask for low fat, did you?) :)Praline Sweet Potatoes2 cups mashed sweet potatoes1/2 cup sugar2 tbsp vanilla4 eggs, beaten1/2 cup heavy whipping cream1/2 pound butter1 cup packed brown sugar1/2 cup flour1 1/4 cups chopped pecans1. Butter a 2 quart casserole dish. Preheat oven to 350.2. Combine sweet potatoes, sugar, vanilla, eggs, and cream. Blend well, spread in dish.3. Prepare topping by combining butter, brown sugar, flour, and pecans. Mix until crumbly and sprinkle over potatoes. Bake for 30 minutes.Cornucopia3 11-ounce packages of refrigerator breadsticks (the kind that come in a can)1 egg1 Tbsp waterNon-stick SprayTin Foil1. Preheat oven to 350. Spray large cookie sheet with non-stick spray.2. Make cornucopia shape out of tin foil. Stuff wiht balls of foil so the shape is solid. Spray outside of foil with non-stick spray.3. Beat egg & water to make glaze. Wrap breadsticks in one layer around foil cone, connect ends with glaze.4. When the shape is covered, brush the entire thing with glaze.5. Bake 45 minutes until dark brown.6. Remove foil when completely cooled.We've never eaten this, but it does make an interesting centerpiece or veggie tray.
